This farm-to-table weekend highlights the transition from summer to fall. Chef & Farm Director Davis Lindsey prepares innovative plant-based meals that highlight ingredients grown on-site. He will also lead a Farm tour and discussion around the seasonal produce and its soil. Hospitality Director Lauren Aitken pours and explains a selection of wines and local ciders prior to dinner.
Bike or stroll the extensive grounds, grab fresh eggs from the hens, swim, bask around bonfires, receive a massage, engage the movement studio, nestle in a reading nook, play billiards or records or board games. Davis Lindsey is the Chef & Farm Director at Lundy Farm. After graduating from Yale University in Environmental Studies, Lindsey worked as a fellow for the Rocky Mountain Institute before deep diving into the experience of food and agriculture. He immersed himself on farms and in kitchens for over a decade at Blue Hill, the Stone Barns Center, Four Season Farm in Maine, Pure Food and Wine, and Brushstroke in NYC. At Lundy Farm, he grows the food on the menus that he creates and prepares.
Lauren Aitken is the Hospitality Director at Lundy Farm. She has been in the restaurant and hospitality industry for over 12 years. Her experiences took her down to the island of Tortola to run The Dove - a small French restaurant and wine bar where she began to focus more intensely on wine. She was based there for 6 years as the GM and wine buyer before landing back in the Hudson Valley as the GM & food and beverage director at Butterfield located in the Hasbrouck House. Lauren loves pairing, diving into the smaller varietals, engaging wine drinkers in education and conversation, and traveling to go explore new wine regions.
